Lovely fresh salsa with a kick!

Ingredients:

- 4 Tomatoes ( about 1.5 pounds), peeled & diced
- 1/2 Cup Onion, finely chopped
- 1/2 Cup Celery, finely chopped
- 1/4 Cup Green Bell Pepper, finely chopped
- 1/4 Cup Oil (can decrease to 1 Tbs)
- 2 Tbs Green Chili Peppers, canned, finely chopped
- 2 Tbs Red Wine Vinegar
- 1 tsp Mustard Seed, ground
- 1 tsp Coriander Seed, crushed or ground
- 1 tsp Salt
- 1 dash Black Pepper, to taste

Steps:

- To peel tomatoes, dip them in boiling water for 30 seconds then plunge into cold water. Slip skins off and dice. Note: Plum Tomatoes seem to work best.
- Combine chopped tomatoes with onion, celery, green bell pepper, oil, green chili peppers, vinegar, mustard seed, coriander seed, salt and pepper. Mix thoroughly.
- Cover. Refrigerate several hours or over night, stirring occasionally. Tastes best after marinating for 24 hours.
- Substitution: 1 or 2 fresh jalepeno peppers (in place of green chiles), diced. Removing seeds will decrease heat.
