Salsa Cruda

Description:
Lovely fresh salsa with a kick!
 
Ingredients:
  • 4  Tomatoes ( about 1.5 pounds), peeled & diced
  • 1/2 Cup Onion, finely chopped
  • 1/2 Cup Celery, finely chopped
  • 1/4 Cup Green Bell Pepper, finely chopped
  • 1/4 Cup Oil (can decrease to 1 Tbs)
  • 2 Tbs Green Chili Peppers, canned, finely chopped
  • 2 Tbs Red Wine Vinegar
  • 1 tsp Mustard Seed, ground
  • 1 tsp Coriander Seed, crushed or ground
  • 1 tsp Salt
  • 1 dash Black Pepper, to taste
 
Steps:
  1. To peel tomatoes, dip them in boiling water for 30 seconds then plunge into cold water. Slip skins off and dice. Note: Plum Tomatoes seem to work best.
  2. Combine chopped tomatoes with onion, celery, green bell pepper, oil, green chili peppers, vinegar, mustard seed, coriander seed, salt and pepper. Mix thoroughly.
  3. Cover. Refrigerate several hours or over night, stirring occasionally. Tastes best after marinating for 24 hours.
  4. Substitution: 1 or 2 fresh jalepeno peppers (in place of green chiles), diced. Removing seeds will decrease heat.
